This watermelon slushie is basically summer in a cup. Which is great because this year Scotland seems to have skipped summer altogether.
Unless you consider rain showers and 15°C (60°F) pool weather, that is… Brr! I know, I know – look at me becoming all British and talking about the weather.
Seriously though. This watermelon slushie is a little stroke of genius in a glass. You only really need three ingredients, a blender and five minutes. It might just be the easiest and healthiest summer cocktail ever!
The three ingredients I use are watermelon, strawberries and lime. But depending on my mood (and the hour of the day) I also sometimes add mint, sugar, ice and a splash of booze. That’s what happens when you work from home… 💁
Because this is a summery drink I make it frozen. And instead of diluting it with ice I freeze the fruit ahead of time. But if you don’t have access to a freezer or don’t want to wait around, feel free to use ice instead!
The key to making a delicious watermelon slushie is using only the sweetest and freshest fruit. In Britain watermelons are at their best from mid-June to late August. In the USA, domestic watermelon production is at its peak from May till August.
So now is the perfect time to make a watermelon slushie, although they are imported all year round so you can enjoy it anytime you want. Nom nom nom.
I add strawberries because I think they make everything better. But you can leave them out and use sugar to sweeten the drink. Whatever you do, I’m sure you’ll love this easy 5-minute recipe!
Watermelon Slushie Recipe
- 2 cups frozen watermelon
- 1 cup frozen strawberries
- 1/2-1 lime, juiced
- mint (to garnish)
- sugar (optional)
- crushed ice (optional)
- 4 shots tequila or vodka (optional)
1. Deseed your watermelon – or use a seedless watermelon . Cut it into small pieces and freeze for a few hours. Wash and freeze your strawberries as well.
2. Blend all the frozen fruit – do it in batches if your blender isn’t very powerful.
3. Add the rest of the ingredients and blend. Garnish with mint.
